How can I turn off shuffle?

I've figured out how to turn off iTunes' shuffle function on my mobile devices, but I don't see any way to do it on my desktop iTunes. This used to be so simple! I could sort my playlist any of several ways, turn off shuffle, and hear songs in whatever order I liked. "Shuffle" was a simple toggle. Intuitive and easy.

Now pressing "shuffle" just seems to reshuffle my list. A web search shows there's apparently no way to turn shuffle off now. Apple's so great lately at taking away options and replacing them with stupid eye candy features nobody needs. You guys get more like Microsoft every day.
